1) Tradies - Electricians, plumbing, etc... It's easy to have a monopoly on a small town if you do simple research, as there's a lack of tradesmen in sparsely populated countrysides and boomers will pay you $80/hr to install chandeliers
2) Medical jobs - Elder care, medicine, nursing, etc.. Aging population means that there's a constant supply of meat
3) Infrasturcture - working powerlines, setting up fiber optics, tarring roads
4) Pensions and gibs

But yes, ever increasing economic hyperinflation is making the urban/rural divide even more insane as young people are bottlenecked into ever decreasing options and expensive degrees and programs which pay livable wages. You're never gonna afford rent working for some mom n' pop shop in the country in 2020 + 3 3/4.
