Literally a blood ritual that Jesus stepped in for. There is even ancient texts where 2nd or 3rd generation Christians said that while they still sacrificed the goat, it was only for traditional reasons and not for religious reasons anymore, because Jesus was the lamb of god.

He is the savior of sheep and goats, basically because Christians no longer have to kill them in a blood ritual to cleanse their sin. That is where all the lamb of god symbolism comes from when Jesus talked about it, because it was understood that blood sacrifices had to be made to cleanse Jews of their sins.
