Scanning takes places at multiple stages along the chain it would appear also, so while a zip tie doesn't represent the most advanced tech in being tamper-proof, it might be more trouble than it's worth to try to fake things at multiple points along the chain by trying to switch out high quality beans for lower ones or something of that nature. It's not totally clear in the video, but they also show that bundles that are already identified also get packaged together and that package has the included bundles identified and is then given its own identifier which prevents swapping out of goods at the packaged level as well.

The innovation here isn't necessarily the QR code itself, it's in the usage of it combined with blockchain to bring validity to the supply chain. That said, the product itself needs to have an identifier, so there's no reason that additional sensors for deeper tracking and transparency couldn't be integrated at a later point (or already is and is not shown)."
