I've been looking at Stellarx.

What I'm trying to understand is that, if you're a "service provider" for a Network, and you had the choice of either receiving a Fiat Token (which could could then be redeemed for actual fiat), VS, some potentially low liquidity Utility Token, which will require conversions into Fiat, all the while being exposed to price fluctuations - Why would you chose compensation of a Utility Token over Fiat?

Bancor actually was an attempt to try and solve these potential liquidity issues.

But, let's say Fiat tokens were introduced to Ethereum's blockchain. Would they displace Utility Tokens?
