If I swap a coin on uniswap and while it is pending the price changes in my favor will I get the favorable exchange rate or am I locked in to the exchange I submitted the transaction at?

I know slippage will prevent an unfavorable trade where you don't receive what you initially bid for, but what about in the opposite case?

What's the proper protocol for buying low liquidity coins? I always make my buy order in too high and waste a lot of money, but if I set it lower I would miss a potential moon mission while I sleep.
