The real problem here is that you're still mentally a child. You're acting like a child, and they're treating you like a child.
If you want to be treated like an adult, start making adult decisions and leveraging your free will to make deals with your parents, which means threatening walking away from the table.

Put simply, an Adult in your situation would be absolutely furious if they went through your mail. Doubly so if they're charging you rent, which changes the relationship dynamic from parents to roommates/landlords. Landlords are absolutely not allowed to open your mail. Period. This is point one. The next point is to leverage your relationship with them as a non-binding contract. After you reach adulthood (legally you're already there) you have no obligation to remain in contact with them or assist them in any way. It would be heartless and callus and in poor taste to say this to them in no uncertain terms, so rather you need to strongly imply that they are straining the relationship by trying to control your financial decision making. Make it very clear that you will do what you please with your money, and if they try to interfere you will find a new living situation. Then, and this is important, follow through with that intent. If the relationship continues to deteriorate, remove yourself from the toxic environment as quickly as you can.

That means getting a fucking job. That means moving in with roommates.

All this also means you need to have a fucking plan for your future, so start thinking about where you want to be in 5-10 years. What do you want for your life? Answer that first, then do everything else above.
