Trezor and Ledger being hardware also limits them because hardware can't be modified after it's sold outside of software. If there's an exploit on the hardware end that can reach over the net, you're fucked.
I split the difference on Metamask being the safest bet as it apparently is just an application that responds to local data. Unless Metamask is caching all of these account phrases, you have nothing to worry about.
The OS side is another worry, though. I'd never set a wallet up on Windows or a phone. I did mine on TailsOS and put the password in a password vault, then copied and pasted it to MM on my devices. That way the phrase can't be keylogged.
