That heavily depends on the type of deposit your working, but for the site your going to be at, this pic should explain a lot. In underground, your usually working in drives that access above or below "stopes" (imagine a vertical gallery where the ore drops from) or from block and pillar setups. Stoping is the most common way to underground mine but it all depends on the shape and style of the mineral system.

At your site, it will work nearly identical to pic related, an adit or portal spirals down to a set of main drives or levels, from which the ore body is drilled for blasting or ore is drawn from. Usually they are spaced 100m or more apart, but this can be different per location.
Ore is drilled for blasting on one level, often from multiple locations at once, the blast is below this level in the ore body, and drops down to a haul level for recovery. Material is then hauled to the main shaft and fed into an "ore pocket", then into skip cars in the shaft and to the surface.
often waste is sent back down in a slurry form or as solid material to back fill existing worked out areas, to keep workings nearby stable.
