When I was unemployed many years ago, I went on EBT for about 6 months to avoid spending my savings and investments on food. You can get a lot of food for not very much money if you eat brown rice, eggs, a few vegetables, apples, peanut butter, macaroni and cheese. Apples and brown rice should provide enough fiber in your diet. You can get bags of apples for like $3 in a lot of places. Basically I recommend just learning how to stir fry and you basically cook up onions and carrots and green beans or whatever other cheap vegetables you like and put that over brown rice. You can also make fried rice this way and add a scrambled egg to it. You can steal onions sauce and other condiments from a Chinese or other Asian restaurants pretty easily. A lot of places leave bottles of different stuff on the table. It's not like you have to go back there.
