You dont necessarily get fucked because you get the cuts you want.Its all about scale. My dad part time helped out at the local dairy farm when i was a kid(im old). Every year we got a whole beef and loaded 2 freezers. I never ate beef at home that didnt live its life 1 mile from our house. Have kept this going since i got out of college, next gen of farmers, the old timers all died off, the herd is just a tradition, none of them even do farming anymore, though one guy who retired from his day job is now managing two hobby farms that the rich ny kikes started in the area.
Most people cant deal with a half even, it absolutely packs a full size freezer.
Good on you getting local beef, people have no idea how much better it is.

Also picrel, cows are dangerous af because its 2000 lbs of pure power. If they get scared and bolt they will fuck you up just by being near them, they aren't trying it just happens. A guy locally got paralyzed just last year when he was inside pen with cow, it got spooked, knocked him over and stepped on his back. He was lying there in the mud for like 6 hours because he didnt have phone on him, lived but he got fucked up bad.
