Give a real world example of smart contract business interaction using chainlink? How does the oracle network validate data input to be true or false?

Your cat dies and you want insurance money from the smart contract, what does the oracle-network do to validate if your cat really died or not? The input data emerges from real world and it needs to be translated into the network, through a party of trust (a single veterinarian saying the cat died or did not die).

I am interested to understand how does this work in principle.
