The dynamic you speak of is real, but you're conflating how-hard-to-fake with how-often-is-it-faked.
Everything from ASEs to pennies have been faked. Doesn't change the fact that it's easier to fake bars and easier to test coins/rounds. You can download an app to your phone that analyzes the "ping" for coins/rounds. Harder to do a non-destructive test for bars. Magnet tests are good but can be fooled, testing machines are expensive.

When you're just starting out, best to stick to trusted dealers like the ones at the top of the OP list.
Avoid ebay, leddit, CL etc until you know what you're doing.
You can do the quick tests in the OP, use magnets, do gravity test, etc. There's also an app that does the ping test, so maybe get coins/rounds at first.
Do some research on the coins/rounds you're planning on buying, learn the common counterfeit "tells", look at
