In the UK they both have the same exclusive benefits in that they're legal tender so you don't pay capital gains tax and both are gold meaning you don't pay VAT. With the pure gold 24K coin you can easily figure out what the spot price is by just watching its market value without having to do any calculations. Sovereigns are 22K gold with 8.4% copper. This gold-copper alloy makes the coin much stronger compared to the pure gold coin which is soft. Because the sovereign is an alloy they're much cheaper than pure gold coins. A double sovereign is roughly the same size as a 1oz gold coin so if you want a size similar to that get the double sovereigns. With it being an alloy you won't get the same golden luster as a pure gold coin, but then the question becomes what you want out of bullion. BTW the 2022 sovereign (in your image) is a limited edition platinum jubilee coin. These will be very sort after in the future as there may never be another British monarch that reaches 70 years service ever again.
