I work in this industry for about 3 years now and it's so fucking riddled with gatekeeping everywhere it's ridiculous, now it's even harder for you to get information or work without being friends with some OldFag that works with 3D since 2003 and has all the tutorials that actually matter.
Most books are money traps filled with bullshit, as are most courses.
This is one of the reasons why there are few decent technical artists, try learning that shit on your own.
I can count on my fingers the number of good rigging artists (that aren't just skinWeight-painters) in my country, and it's mostly because of knowledge gateKeeping.

the tutorials... let's just say that only a small fraction of them are really worth to watch.
if you are just starting out and are adamant on using blender, then you're better off simply reading their official manual to get accustomed with interface.
during that, watch general modelling techniques from people like arrimus or warwick, try to replicate what you have seen in blender, then apply the knowledge you have gained to your own projects
it's might not necessarily be the best approach to learning since you'll be stuck often trying to translate it to blender interface, but I believe it's better than mindlessly copying donut or chair since it will require you to actively explore your chosen 3DDCC.
