What general methods of modeling, rigging, rendering, etc. would work best for making some horrifying practical looking effects like The Thing?

You'd be surprised how well it works. I've seen ads I was certain were stop-motion animation, only to find out it was cgi models made to look like jointed puppets.

In 'pirates of the caribbean' people assumed Davy Jones's eyes were real but those were cgi too.

Misdirection, I guess. People will figure out if something looks uncanny, so fooling them into thinking it's something else works well.
