thats probably because you played the Eidos port version.
The PS1 version has a couple if things that are visually more interesting, with the models being one of them.
This site covers the differences. You might think theyre only minor, but they play a large role in how the game carrys itself.

Why?
Chibi means you can zoom faster and earlier, and further out. And FF7 takes huge advantage over how far you can zoom out the camera before you lose detail to lack of resolution and lack of z-buffer and anti alias.
